One of my secret haunts, Lundy Island in the Bristol Channel, takes its name from the Old Norse word for Puffin, and is an important breeding ground for these beautiful rare creatures.

Layers of dark and milk chocolate are then filled with ganache and gently salted caramel before being wrapped in a fine sugar shell and life-like speckles.
